California Common Beer 8 lbs 2 row Malted Barley 1 lb Light Crystal Malt 1.5 oz Washington Cascade ( 4.6% ) 14 grams European Lager Yeast 1 teaspoon Irish Moss 2 teaspoons of Gypsum Mash : Prepare 8 gallons water raise to 170 degrees and add gypsum. Add Malted Barley and Crystal, to 2 1/2 gallons, mash for 1 hours @ 155 F. Mash out at 168 degrees for 15 minutes. Sparge with remaining water @ 168 degrees. Boil : Bring to boil ( about 1 hr. ) Add Hops, boil for 1 hr. 1/2 hour into boil add Irish Moss. Cool to 75 degrees. Add yeast, cover with fermentation lock, sit a room tempurature 2-3 days ( until fermentatiom subsides ). Rack to Glass Fermentor 14 days ( keep out of sun ) room tempurature. Rack to 5 gallon Soda Kegs, age a while ( 2 weeks ) You could chill to 40 degrees if you have space in the refridgerator. ADD Carbonation ( gas at 25 PSI for 3 days ) release presure, serve in 2-3 days. Beginning S.G. 1.045 ( if you mash well ) AAU's about 25 Great clear beer, can't be beat from the Keg.
